Favorite Pumpkin Bars-- Shelly Airmet

1 1/2 c. pumpkin
4 eggs
1 c. oil
1 2/3 c. sugar
2 c. flour
1 tsp. soda
1 tsp. salt
2 tsp. cinnamon
2 tsp. baking powder

Whip pumpkin, eggs, oil, and sugar. Stir in remaining ingredients. Pour into greased 9 x 13-inch baking dish. Bake at 350 degrees for 25-30 minutes. Let cool and frost.

Cream Cheese Frosting

1/2 c. butter
3 oz. cream cheese
2 c. powdered sugar
1 tsp. vanilla

She had piped the cream cheese frosting onto the individual bars for our opening night. They made a beautiful presentation! They were so moist!

  1. I baked these fabulous bars this morning to deliver to a family member. What a great recipe. I can't get over how moist these are. I added about 1/2 tsp. of nutmeg and they turned out great! I think the recipe for the frosting is the perfect proportions too! It is going to be my go-to recipe for Cream Cheese Frosting. Thanks Shelly!
